How to make melon seed milk

Over the summer during melon seed season, I like to save the seeds from the melons to make melon seed milk. It's a refreshing, slightly sweet beverage that is perfect for the warmer months! It's a great way to get in some extra minerals as well, such as magnesium, phosphorus, potassium, zinc, iron, calcium, copper, and manganese.

Ingredients

-1/2 cup of melon seeds of any variety of melon (I use all the seeds in one melon: sometimes more than 1/2 cup)

-4 cups of filtered water

-Your choice of sweetener: agave, dates, maple syrup

1. Scoop all the seeds out of the melon (it's ok if you get some of the fruit netting bits in it).

2. Add seeds to a blender with 4 cups of filtered water and sweetener of your liking (I use agave, maple syrup, or 1-2 dates). I add 1-2 tablespoons of sweetener. Blend well.

3. Strain the mixture with a nut milk bag or stainless steel strainer. Store in the fridge for up to 3 days.
